Born in Panama and currently residing in NYC since 2004, Javier Gomez captures the world with a feeling of spirituality and sensitivity rarely seen.  After living in Costa Rica, Milan and Miami and traveling to more than 30 countries, Javier studied photography at NYU before going to work with famed fashion photographer Steven Klein.  Javier’s work aims to connect people to one another and to themselves by brining a sense of internal peace through his art.  His soul and spirit, along with his connection to a higher spirituality can be felt in the images he captures and the energy they evoke.  Javier’s current work, taken during his travels to Miami, NY, California and Arizona, are just the first steps in the ever-evolving eye of this rising talent.

Super Bowl 2010!!!

Believe it or not, another football season is nearing its end.  The Super Bowl is around the corner it’s a good idea to start planning your party for the big game!  Most will agree that the highlight of a Super Bowl party (aside from the game itself) is the food.  You may decide to have snacks or an entire meal – either way, preparation is a must.

Most knowledgeable party hosts recommend sticking to “easy-to-prepare” finger-foods that are simple to eat and reduce on messy spills associated with things like chili.  Super Bowl favorites include appetizers like shrimp cocktail, potato skins, meatballs, and chips with dip.  Remember, though, easy doesn’t have to mean boring.  Get creative, prepare a seven layer dip or guacamole instead of the traditional store-bought dip.

Along with appetizer snacks, no Super Bowl party is complete without chicken wings.  It’s probably best to prepare both spicy and non-spicy wings to satisfy everyone’s individual taste.  In addition, try to get smaller wing cuts so they are a little less messy.  Wings can be thrown on the grill to cook, then placed in the oven to keep them warm for several hours.

Finally, make it fun!  If your favorite team is in the Super Bowl, you may want to have a cake made with their logo on it, or buy printed napkins and plastic plates.

Cuisiniers’ Salted Caramel Sauce

The following is a sauce recipe you are sure to see a lot of in 2010.  Enjoy!

(Makes approximately 2 cups)

Cuisiniers’ Salted Caramel Sauce:

  • 2 cups sugar
  • 1 1/2 cups heavy whipping cream
  • 2 tbsp salted butter
  • 1/2 tsp kosher or sea salt

In a large heavy metal pot or Dutch oven spread sugar in bottom of pot.  Place on medium heat and cook without stirring until the sugar around the edges starts to liquify.  Next, using a wooden spoon, gently stir the sugar.  As it begins to look like little pebbles, keep stirring until the amber color turns a deep brown.  Remember to not stop stirring!  Finally, remove the pot from the heat and carefully add in 1/2 of the cream.  Use caution as the sauce will bubble up dramatically.  Add in the remainder of the cream until the sauce is smooth.  Finally, stir in the butter and salt.  Serve warm over apple fritters, bread pudding, your favorite ice cream, a warm chocolate brownie, or a combination of the above!

Serve Immediately and Enjoy!

New Years Wishes from Cuisiniers

Wow, what a roller coaster ride the past decade has been!  So hello 2010; we welcome you with open arms and hungry bellies.  As exciting and challenging as the last 10 years were, I look to the future with anticipation of having many more years to accomplish set goals, while continuing to enhance my skills and knowledge in the ever-evolving culinary arts.

This coming year, dining menus promise to be even more delicious.  Here are a few things to look forward to:  Varieties of cupcakes, lamb burgers, fresh pickles, smoked salts, anything with bacon, romesco sauce, grilled cheese sandwiches, empanadas, grain salads, even more “small plates”, savory jams, flatiron steaks, marcona almonds, different flavors of bolonese, new takes on cauliflower, Rhone varietals grown in the U.S., herb infused cocktails, decanted champagne, unique flavors of macroons, infused chocolates, guided private foodie trips, Penn Cove mussels, and with any luck at all, more caviar!

I am excited to be kicking off 2010 with this week’s opening of our “Gallery at Interlachen”.  Here, you will discover the newest destination for private meetings, conferences and intimate social events nestled within a unique art gallery setting.  I invite you to stop by for a tour and allow us the opportunity to help you entertain deliciously and EASILY.

The past 18 months or so have really been a reminder that even with all its bounty, this wonderful world we live in unfortunately can still prohibit access to what many of us take for granted….fresh, nourishing fruits and vegetables – a growing problem that needs a lot of attention to even attempt to resolve.  This is why I, along with my good friend Jorge Arredondo have established The Peas Foundation.  Our mission is to produce eating alternatives simply by partnering with a variety of agencies to combat poor nutrition and help raise awareness.  Over the next few months, I will be updating you on our progress and occasionally reaching out for assistance.

5 Day Plan to Stress Free Thanksgiving

Thanksgiving is a time when family and friends come together to enjoy a delicious meal and spend time with one another, but with the rush to prepare and cook an entire meal, enjoying yourself can become difficult.  Getting started early on preparations can be the key to a stress free Turkey Day.  If you are organized and plan ahead, your Thanksgiving will run smoothly and be a little more enjoyable.

To help you, we’ve prepared a 5 day plan for the week of Thanksgiving.  This will allow you to disperse the chores over several days instead of dealing with the pressure of last minute preparations:

Saturday prior to Thanksgiving:
It’s time to get organized by writing your lists!  A grocery list, an attendance list, and a list of decorations are all vital to preparing efficiently, from knowing the type and amounts of foods to your budget for decorations.

Sunday prior to Thanksgiving:

Now it’s time to put your lists into action by getting all your shopping done.  You will have a few advantages finishing all your shopping several days before.  First, you run less risk of an ingredient being out of stock; secondly, you will have first pick of turkeys, decorations, or anything else that may require some decision making.

Monday prior to Thanksgiving:

Today it’s time to start cooking.  Bake any specific breads or cookies, so they can easily be put in the oven and warmed or crisped.  Plus, waiting on items to bake can be a great time to put up decorations in your dining room or foyer.

Tuesday prior to Thanksgiving:
This is a great day to start cooking side dishes.  Make any casseroles or salads that can be refrigerated without spoiling or sacrificing flavor.  If the dish cannot be cooked several days in advance, at least prepare the dish so it’s as simple as placing the dish in the oven on the morning of.

Wednesday prior to Thanksgiving:
With only one day until Thanksgiving, today will be the bulk of your cooking.  First, you’ll want to gather any pie ingredients, assemble, and bake the pies.  While waiting on the baking we’ll focus on the last major hurdle before Thanksgiving dinner – your turkey!  Today you’ll want to prepare your bird by trimming and marinating it.  The turkey should be in refrigerator at the end of the day, ready to simply insert into the oven the next morning.

Happy Turkey Day!  It’s time to reap the benefits of all your upfront work.  While others are scrambling for last minute preparations and trying to put out fires (literally and figuratively speaking!), your only job will be to turn on the oven and place a few main dishes in!  Pull out the sides and desserts that you’ve already prepared and make any last minute side dishes or condiments.  Now simply enjoy the time with your family and revel in the fact that you’ve pulled off Thanksgiving dinner – stress-free!

Gorgonzola Cocktail Tarts

(40 Tarts)

Gorgonzola Cocktail Tarts:

  • 3 Large Eggs
  • 1.5 cups Cottage Cheese
  • 1 cup Buttermilk Baking Mix
  • 1/4 cup Butter, melted
  • 3 tablespoons of Sour Cream
  • 1 teaspoon chopped Rosemary
  • Pinch of Salt & Pepper
  • 1/2 cup packed Gorgonzola Cheese
  • 1/4 cup toasted Pinenuts

Preheat oven to 400 degrees

Spray about 40-1.75 inch diameter muffin cups with non-stick spray.  Whisk eggs and next seven ingredients in a large bowl.  Stir in Gorgonzola.  Fill each cup with generous 1 tablespoon of batter.  Top batter with 3-4 pine nuts.  Bake tarts until golden and puffed, about 25 minutes.  Cool in pans for 5 minutes.

Serve warm or at room temperature!

Unique Wedding Venues

So you’re planning a wedding, but you would like to do something a little less traditional and more unique? Well, the venue you choose for the wedding ceremony or the reception can have a huge impact on the overall feel of the wedding. Your guests will appreciate the change of pace, and your memories will be unique to you and your spouse’s interests! Not to mention, some unusual venues can be much less expensive than the more traditional locations.

Below are several examples of unique wedding venues. Before throwing them aside, always consider the transformation that can take place with a decorative touch:

  • A Golf Course.  Even if you are not a golf enthusiast, a golf course can be a beautiful setting for a wedding ceremony.  It can be a very personal and intimate setting, not to mention, you will most likely be the only wedding that day, so you will not have to worry about other weddings going on around you!
  • Your Favorite Restaurant.  Have a favorite restaurant?  Talk to the owner and see how much it would cost to hold the wedding there.  Try to find one that is aesthetically pleasing, with a garden area, outside bar, or something unique that will add to the experience.
  • Your College.  If your are both Alumni of the same college, it can be a great place to say “I do.”  Find a picturesque or memorable part of campus to hold the wedding ceremony.  Typically, if you are Alumni, you may even get a better price.
  • Disney World.  Maybe a little, well, “Disney”, but they actually have a very lovely wedding pavilion.  Honeymoon in one of the many luxury hotels, and treat your guests to park passes.  This can especially be a great option for a guest list with lots of families.

These are simply a few examples, but feel free to use your imagination.  When planning an “unconventional” venue, your primary consideration should be the bride and groom followed by the wedding party.  Consider your personalities and common interests; this can be a great starting point.  Also, think of places that have personal meaning to you as a couple.  Did you meet at the theater or get engaged on the beach, for example?  Lastly, don’t forget about your guests; although the day is meant to be special to you and your spouse, many times it’s not where but who you’re with that really matters.
